THE ORIGIN OF A SIMPLE DREAM
Having spent 15 years in the U.S. military, Tommy Ivester, the founder and chief roaster of Fred Coffee, kicked off the brand by setting up the first roasting operation in his garage in 2021. Influenced by the unique coffee flavors he encountered during his global travels, Tommy had a straightforward goal in mind: to provide a feel-good experience, top-notch service, and superbly made coffee. After many late nights and the evolution of the roasteries, that founding vision still shapes what Fred Coffee aims to achieve today.
FROM BEAN TO BREW
Our Bean to Brew sourcing approach rests on three sustainable cornerstones: social responsibility, economic fairness, and environmental stewardship. We foster robust and transparent partnerships with the farmers and estates that supply our coffee. Committed to their financial well-being, we consistently offer compensation that exceeds Fair Trade standards. Additionally, we selectively collaborate with producers who are committed to eco-friendly practices, such as water conservation, maintaining forests, and managing shade effectively. The path from Bean to Brew is intricate, comprising numerous detailed stages. From the initial harvesting to milling, transporting, packaging, exporting, importing, roasting, and finally brewing, we exercise thorough diligence at each juncture. This meticulousness ensures that every cup we serve meets the highest quality standards.
OUR ROASTING PERSPECTIVE
Each coffee variety we acquire merits its own roasting strategy. When we obtain green coffee straight from the source, it's clear to us that every batch has its own unique narrative. Therefore, we curate an individualized roasting profile designed to emphasize its inherent characteristics and to illuminate its singular journey. Through collaborative efforts, our Coffee Director and Head Roaster employ a highly customized approach, using repeated tastings and meticulous scrutiny to draw out the coffee's ultimate flavor qualities. We hold the conviction that exceptional coffee arises from intention, not chance, and continually aim to elevate both aroma and flavor with each and every roast."
